Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the moulded dish and gives it its savoury flavour.
Mashed potatoes
Adds bulk and softness, helping the mixture hold together while it cooks.
Cornstarch
Thickens the milk so the mixture sets into a firm, sliceable mould.
Peas
Form a green layer at the base and provide the creamed peas that accompany the dish.
Flour
Thickens the cream sauce so the creamed peas have a smooth, coating consistency.

The step that matters

Set the mold in a pan of hot water. The mould cooks gently in the surrounding water bath, so the mixture heats evenly and sets without drying or curdling at the edges. Keeping the water hot and the pan covered maintains steady heat.

Swap the peas

How well each one fits the dish's main ingredients (fish, pepper, milk, potato, flour):

  1. Beansfits better
  2. Chickpeafits better
  3. Almondfits about as well
  4. Peasthe original

Fit is the average pairing score against fish, pepper, milk, potato, flour. Candidates are from the same food group and used in at least 100 recipes.
