Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the roast

  1. Preheat the oven to 400°F (200°C).

  2. Season the roast with salt and pepper.

  3. Dredge the roast well with flour.

  4. In a covered roaster, heat the oil or fat.

  5. Lay the roast in the roaster.

Roast and add vegetables

  1. Roast for 5 to 6 minutes.

  2. Pour in 2 cups of hot water.

  3. After 15 to 20 minutes, add another 2 cups of hot water.

  4. Twenty-five minutes before removing from the oven, add the vegetables around the roast and season them with salt and pepper.

  5. Add a little more hot water.

  6. Reduce the heat.

  7. Cook more slowly.

Finish the gravy

  1. After removing the roast and vegetables, thicken the gravy with a little flour mixed with water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal rump roast
Is the main protein; its lean muscle cooks through and becomes tender with slow, moist heat.
Flour
Coats the roast so it browns and thickens the gravy as it cooks in the juices.
Potatoes
Absorb the cooking juices and turn soft and starchy as they roast beside the meat.
Carrots
Soften as they cook and add sweetness to the pan juices.
Onions
Soften and sweeten as they cook, flavouring the gravy.

The step that matters

Adding the water in stages. Adding the hot water in measured portions keeps liquid in the covered roaster so the roast braises rather than dries out, and the gravy base forms from the juices and browned flour.

Swap the onion

How well each one fits the dish's main ingredients (veal, potato, carrot, flour, pepper):

  1. Parsnipfits better
  2. Turnipfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against veal, potato, carrot, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
