Sweet-bread and Oyster Pie

Ingredients

Directions

  1. Parboil the sweetbreads until tender.

  2. Line a dish with pie crust.

  3. Cut the sweetbreads into small pieces.

  4. Layer sweetbreads and oysters in the dish, seasoning with pepper, salt, and butter, and adding mashed hard-boiled egg yolks.

  5. Repeat layers until the dish is full.

  6. Cover with a top crust and bake.

  7. Cut a cross in the center of the top crust to let steam escape.

  8. Place a small egg cup in the center to keep the crust from touching the filling.

  9. Serve hot.
