What each ingredient does

Tapioca
Thickens the pudding as its starch softens and swells in hot milk.
Milk
Forms the liquid base and adds richness and a creamy body.
Eggs
Set during baking to give the pudding a firm, custard-like structure.
Butter
Adds fat for a smoother mouthfeel and richer flavor.
Sugar
Adds sweetness to balance the milk and eggs.

The step that matters

Bake until set. Egg proteins coagulate as the custard heats, so the pudding firms up. Underbaking leaves it runny, while overbaking can make the eggs curdle and turn grainy.

Swap the lemon
