Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Roasted Oysters on Toast
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 400°F (200°C).
Butter the toast and place it in a hot dish.
In a saucepan, melt the butter over medium heat.
Add the flour and stir until smooth but not browned.
Pour in the cream and bring to a boil.
Place the oysters (with their liquor) in the oven for 3 minutes.
Add the oysters to the cream, season with salt and pepper, and pour over the toast.
Garnish with lemon slices and serve immediately.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
