Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the apple base

  1. In a bowl, beat the egg yolks, butter, bread crumbs, and apple sauce until well combined.

  2. Pour the mixture into a baking dish and bake until the top is browned.

Make and add the meringue

  1. In another bowl, beat the egg whites with sugar until stiff peaks form.

  2. Spread the meringue over the baked apple mixture and return to the oven until the meringue is browned.

What each ingredient does

Eggs
Yolks enrich and bind the apple base, while whites whip into a stiff, structured meringue.
Bread crumbs
Absorb moisture from the apple sauce and give the base body so it holds together.
Apple sauce
Provides the moist, tart apple base that forms the main body of the dish.
Sugar
Sweetens the meringue and helps stabilise the whipped egg whites.

The step that matters

Beating the egg whites to stiff peaks. Whites must be whipped until they hold stiff peaks so the meringue forms a stable foam. Any trace of yolk or grease can stop them whipping fully, and under-beaten whites will slump and weep in the oven.

Swap the apple

How well each one fits the dish's main ingredients (sauce, bread, egg, butter, sugar):
