Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the dressing and helps the butter become light when creamed.
Butter
Adds fat for richness and a smooth, creamy texture.
Egg
Thickens the dressing as it heats and helps bind it together.
Lemon juice
Adds the sharp acidity that gives the dressing its bright flavour.
Lemon rind
Adds aromatic lemon oils for fragrance without extra sourness.

The step that matters

Heating over simmering water without boiling. The egg proteins set gradually as the mixture warms. If it boils or overheats, the egg can scramble and curdle, leaving the dressing grainy instead of smooth and thick.
