Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the egg yolks, 1 cup sugar, lemon juice, lemon rind, cold water, flour, and 5 tablespoons of water until smooth.

  3. Pour the mixture into a pie crust and bake until set but not watery.

Make and add the meringue

  1. In another bowl, beat the egg whites to stiff peaks. Gradually add ¾ cup sugar to the egg whites, continuing to beat until glossy.

  2. Spread the meringue over the baked pie and brown it in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling and enrich it, giving a custard-like set when baked.
Flour
Stabilises the filling so it sets smoothly rather than runny.
Sugar
Sweetens the filling and helps stabilise the whipped egg white meringue.
Lemon
Provides the sharp acidity and aroma that define the filling.
Egg whites
Whip into a foam that forms the light, airy meringue topping.

The step that matters

Baking the filling until set but not watery. Underbaking leaves the starch and egg filling loose and runny, while overbaking can weep or toughen it. The filling must be firm enough to hold the meringue.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
