Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
Provides the main bulk and candied texture once softened and sugared.
Sugar
Sweetens the fruit and, boiled into syrup, penetrates and preserves it.
Lemons
Add acidity and aroma to balance the sweetness of the syrup.

The step that matters

Boil the citron until very tender before adding sugar. Citron must be softened fully in plain water first, because sugar hardens the fruit's tissue and prevents it from becoming tender later.
