What each ingredient does

Cornmeal
Forms the thickened body of the gruel as its starch gelatinizes during boiling.

The step that matters

Stirring constantly while boiling. Cornmeal starch settles and can scorch on the bottom of the pot. Constant stirring keeps it dispersed, prevents lumps, and helps the gruel thicken evenly.
