Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Assemble

  1. Preheat the oven to 350°F (175°C).

  2. Layer half of the breadcrumbs in the bottom of a baking dish.

  3. Place the oysters in two layers, using half of the breadcrumbs in the middle and the remaining breadcrumbs on top.

  4. Dot with butter and pour the oyster juice over the layers.

Bake

  1. Bake for 30 to 40 minutes.

What each ingredient does

Oysters
Provide the main filling and their briny flavour as they cook in the dish.
Breadcrumbs
Form the layers that soak up the oyster juice and give the dish body.
Butter
Adds richness and helps the top brown as it bakes.
Oyster juice
Moistens the breadcrumb layers and carries the oyster flavour through the dish.
