Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Pare and core the apples, then place them in a buttered baking dish.

  3. Fill each apple hollow with sugar and moisten with a little lemon juice.

  4. Sprinkle the tapioca around the fruit.

  5. Pour the cold water into the dish.

Bake and serve

  1. Bake gently for 1.5 hours until a delicate jelly forms around the apples.

  2. Serve with cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Hold their shape as the main fruit while softening and releasing juice into the dish.
Pearl tapioca
Thickens the cooking liquid into a delicate jelly as its starch swells with heat.
Sugar
Sweetens the apples and adds to the syrupy jelly around them.
Lemon juice
Adds acidity that brightens the sweet apple flavour.

The step that matters

Bake gently. Tapioca starch thickens slowly as it swells in the hot liquid. Baking gently over a long time lets the jelly set evenly without the apples breaking down or the liquid scorching.

Swap the lemon
