Orange Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter in a mixing bowl.

  3. Gradually add the sugar and mix well.

  4. Add the beaten eggs and milk, mixing until combined.

  5. In a separate bowl, sift together the flour and baking powder.

  6. Add the flour mixture to the wet ingredients and mix until smooth.

  7. Pour the batter into a dripping pan and bake until golden.

  8. Once baked, cut the cake in half.

Make the filling and assemble

  1. For the filling, mix ½ cup sugar, 2½ tablespoons flour, grated orange rind, orange juice, lemon juice, and the beaten egg in a double boiler.

  2. Cook for 10 minutes, stirring constantly, then cool before spreading on the first layer of cake.

  3. Cover the top layer with frosting flavored with orange.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, giving the cake a tender crumb.
Eggs
Provide structure and binding as the batter sets in the oven.
Flour
Forms the structure of the cake and thickens the filling.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Orange juice
Adds moisture and bright citrus flavor to the filling.
Sugar
Sweetens the cake and filling and helps tenderize the crumb.

The step that matters

Cooking the filling over a double boiler. Stirring constantly over gentle indirect heat keeps the beaten egg from scrambling, while the flour thickens the juice mixture into a smooth custard-like filling.
