Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit juice and natural pectin that set the jelly.
Sugar
Sweetens the jelly and helps it set into a firm gel.
Lemon juice
Adds acidity that brightens flavour and supports gel formation.
Peach kernels
Add a subtle almond-like aroma to the peach juice.

The step that matters

Boiling the juice with the sugar for 20 minutes. Boiling concentrates the juice and sugar so the pectin and acid can form a gel. Boiling too briefly leaves the jelly runny, while overcooking can make it dense and sticky. Removing it from heat promptly stops further thickening.

Swap the lemon

How well each one fits the dish's main ingredients (peach, sugar):

  1. Vanillafits better

Fit is the average pairing score against peach, sugar. Candidates are from the same food group and used in at least 100 recipes.
