Delicious Easter Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, stir together the egg yolks and sugar.

  3. Add the pounded almonds, lemon zest, lemon juice, and grated potatoes.

Make and bake the pudding

  1. In a separate bowl, beat the egg whites until stiff peaks form, then fold them into the mixture along with the salt.

  2. Grease a pudding dish and pour the mixture into it.

  3. Place the pudding dish in a pan of boiling water and bake for 30 minutes.

Serve

  1. Turn the pudding out onto a platter and serve with wine sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites provide the airy structure, and yolks add richness and set the custard-like body.
Blanched and pounded almonds
Provide body, fat and a tender, moist crumb in the pudding.
Sugar
Sweetens the pudding and helps stabilise the beaten egg foam.
Lemon
Zest adds aroma and juice adds acidity that brightens the sweetness.
Grated potatoes
Add moisture and a light, soft texture to the pudding.

The step that matters

Folding in the egg whites. Beaten whites trap air that gives the pudding its lift. Folding gently, rather than stirring, keeps that air from collapsing and leaving the pudding dense.

Swap the potato

How well each one fits the dish's main ingredients (egg, lemon, almond, sugar):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, lemon, almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
