The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, cream together the eggs, flour, butter, brandy, nutmeg, and sugar.

  3. Pour the mixture into a pie crust.

Bake and brown

  1. Bake for 15 to 20 minutes.

  2. Beat the egg whites until stiff and spread them on top of the pie.

  3. Return to the oven and brown the top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the filling into a firm custard and add moisture.
Flour
Thickens the filling and gives it body as it bakes.
Butter
Adds fat for richness and a tender texture.
Sugar
Sweetens the filling and helps the top brown.

The step that matters

Return to the oven and brown the top. Egg whites can go from pale to over-browned quickly at high heat, because their proteins and any sugars darken fast. Watch the top closely and remove the pie as soon as it is evenly golden.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, flour, butter, brandy, sugar):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Allspicefits less well

Fit is the average pairing score against egg, flour, butter, brandy, sugar. Candidates are from the same food group and used in at least 100 recipes.
