Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Puff Paste
Ingredients
Directions
Make the paste
Mix the flour with salt, lemon juice, and enough ice water to form a paste similar in consistency to butter.
Roll the paste to about ½ inch thick.
Add the butter
Shape the butter into a ball and place it on half of the paste.
Fold the other half of the paste over the butter and press the edges together.
If the paste is warm, chill it in the refrigerator for 10 minutes.
Laminate
Roll and fold the paste into thirds.
Repeat this process three to four times.
Chill each time the paste becomes warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Forms the paste and provides the structure that holds the layers together.
- Butter
- Stays solid between paste layers and creates separation that gives a flaky texture when baked.
- Ice water
- Hydrates the flour into a workable dough while keeping the paste cold.
The step that matters
Chill the paste when it becomes warm. If the paste gets warm, the butter softens and blends into the dough instead of staying in distinct layers, which weakens the flaky texture. Chilling keeps the butter firm between folds.
