Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites beaten stiff trap air, giving the torte its light, airy structure as it sets.
Granulated sugar
Sweetens the batter and helps stabilize the beaten egg mixture.
Chopped hazelnuts
Add nutty flavor and fat, giving the torte a moist, rich texture.
Lady fingers
Stale, powdered sponge cookies add body and help bind the batter.

The step that matters

Fold in the beaten egg whites. Folding gently preserves the air whipped into the stiff whites. Stirring or deflating them makes the torte dense instead of light.
