Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Their fat and emulsifying lecithin, blended with butter, make the filling smooth and rich.
Butter
Adds fat that makes the mashed yolk filling creamy and moist.
Mustard
Adds sharp flavor and helps emulsify the yolk mixture.
Vinegar
Adds acidity that brightens the rich yolk filling.

The step that matters

Cool the eggs before peeling. Hot eggs cling to their shells and tear the whites. Chilling the eggs firms the whites and lets the shells slip off cleanly, keeping the halves intact for filling.

Swap the mustard

How well each one fits the dish's main ingredients (egg, butter, pepper, vinegar):

  1. Capsicumfits better
  2. Mustardthe original
  3. Shallotfits about as well
  4. Cucumberfits about as well

Fit is the average pairing score against egg, butter, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
