Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red snapper
Forms the main body of the pudding, setting into soft flakes when cooked.
White sauce
Binds the flaked fish together and adds moisture so the pudding stays tender.
Powdered crackers
Absorbs liquid and helps the pudding hold its shape when turned out.
Butter
Adds richness and keeps the pan and paper from sticking to the pudding.

The step that matters

Steaming the pudding. Steam heat must be kept steady so the fish cooks gently and stays moist. Boiling too hard or letting the water run dry can make the pudding tough or dry.

Swap the potato

How well each one fits the dish's main ingredients (snapper, pepper, butter, sauce, parsley):

  1. Capsicumfits better
  2. Shallotfits better
  3. Tomatofits better
  4. Potatothe original

Fit is the average pairing score against snapper, pepper, butter, sauce, parsley. Candidates are from the same food group and used in at least 100 recipes.
