Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and fruity flavour of the filling.
Eggs
Set the filling when baked and add richness to the custard-like texture.
Butter
Adds fat for richness and a tender, smooth texture.
Sugar
Sweetens the filling and helps it brown as it bakes.
Milk
Adds moisture and softness to the filling.

The step that matters

Folding in the egg whites. Beaten egg whites hold air that gives lift, so fold gently with a spatula to avoid deflating them. Overmixing knocks out the air and leaves a denser pie.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (apple, lemon, butter, sugar, egg, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Tarragonfits less well

Fit is the average pairing score against apple, lemon, butter, sugar, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
