Why it works: Biscuit and nuts share more aroma than cooks usually use. They rank in the top 7% of all ingredient pairs, and cooks put them together in 38 recipes. Both carry maltol, which smells caramel, sweet. The science ↓

Fruit Rolls

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare baking powder biscuit dough.

  2. Roll the dough thin.

  3. Spread the dough with a mixture of chopped raisins and nuts.

  4. Sprinkle sugar over the filling.

  5. Roll the dough like a jelly roll.

  6. Cut into rounds.

  7. Bake in a hot oven at 400°F (200°C) until golden.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
