What each ingredient does

Gelatin
Sets the juice into a firm, sliceable salad that holds its shape when unmolded.
Sugar
Sweetens the lemon and pineapple juice and balances its tartness.
Lemons
Provide acidity that brightens the sweetness and flavor of the salad.
Pineapple chunks
Add sweet, tangy fruit flavor and pieces for texture in the set salad.
Cucumber
Adds a cool, crisp texture and fresh flavor to the set salad.

The step that matters

Fold in the cucumber and pineapple when the mixture begins to set. If the gelatin is still liquid, the fruit sinks and settles unevenly. If it has set fully, the pieces will not distribute through the salad. Fresh pineapple contains enzymes that break down gelatin, so it is usually cooked or canned first.

Swap the pineapple
