Chocolate Cake with Potatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream together the butter, sugar, and egg yolks.

  2. Add the hot mashed potatoes and melted chocolate to the mixture.

  3. In a separate bowl, combine the flour and baking powder.

  4. Gradually add the flour mixture to the creamed mixture, alternating with the sweet milk.

  5. Fold in the beaten egg whites gently until well combined.

Bake

  1. Pour the batter into a greased cake pan and bake at 350°F (175°C) until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat that makes the cake tender and rich.
Flour
Provides the structure that holds the cake together as it bakes.
Eggs
Add structure and richness, and the beaten whites help the cake rise.
Baking powder
Releases gas as it heats, making the cake light and airy.
Mashed potatoes
Add moisture that keeps the cake soft.
Chocolate
Adds deep chocolate flavor and some richness to the batter.

The step that matters

Folding in the beaten egg whites. Beaten whites trap air that gives the cake its lift. Stirring vigorously or overmixing deflates them, leaving a denser cake, so fold gently until just combined.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, sugar, flour, egg, chocolate):

  1. Sweet potatofits about as well
  2. Arrowrootfits about as well
  3. Potatothe original
  4. Capsicumfits about as well

Fit is the average pairing score against butter, milk, sugar, flour, egg, chocolate. Candidates are from the same food group and used in at least 100 recipes.
