Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure and moisture, and help the cakes rise and set.
Butter
Adds fat for a tender crumb and rich flavor.
Flour
Provides the structure that holds the cakes together as they bake.
Sugar
Sweetens the cakes and helps browning while creaming in air for a lighter texture.
Baking powder
Releases gas in the batter to make the cakes rise.
Sweet milk
Adds moisture and hydrates the flour to form the batter.

The step that matters

Gradually add the dry ingredients to the wet mixture. Mix only until the flour is just combined. Overmixing develops gluten in the flour, which makes the little cakes tough and dense rather than tender.
