The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Adds sweetness and lowers the freezing point, keeping the ice softer.
Lemons
Provide acidity and bright citrus aroma that balance the sweetness.
Grapefruits
Supply the main fruit flavor and shredded pieces for texture.

The step that matters

Adding the shredded grapefruit when the mixture starts to freeze. If the pieces are added too early they sink, and if added too late they stay icy and separate. Adding them once ice crystals begin to form suspends the fruit evenly through the frozen mass.

Swap the grapefruit

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits about as well
  4. Grapefruitthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
