What each ingredient does

String beans
The main vegetable; scalding softens the beans so they pack well into jars.

The step that matters

Sealing and boiling water bath processing. The jars must be sealed and held in a boiling water bath for the full time. This heat destroys microorganisms that could otherwise spoil the beans, so shortening the time risks spoilage.
