  2. Mix the cornstarch with a little cold water, then add it to the boiling mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the liquid into a smooth sauce as it cooks and gelatinizes.
Sugar
Sweetens the sauce and balances the sharpness of the lemon.
Lemon
Provides the sour, aromatic flavor from the juice and the oils in the rind.
Butter
Adds richness and a smooth, glossy finish to the sauce.

The step that matters

Adding the cornstarch mixture to the boiling liquid. Cornstarch must be fully dispersed in cold water before it goes in, or it clumps. It needs to keep boiling while cooking so the starch swells and thickens the sauce evenly.
