Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Place the sliced pork in a dripping pan.

  3. On each piece of pork, lay a drained oyster and dust with white pepper.

  4. Cover each oyster with a bit of pork.

  5. Bake until the pork is crisp and light brown, and the oysters are cooked.

  6. Remove to a hot dish and serve with sliced lemon.
