Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sherbet and softens its texture by lowering the freezing point.
Gelatin
Binds water so the frozen sherbet stays smoother and less icy.
Raspberry juice
Provides the main flavour and colour.
Lemon juice
Adds acidity that brightens the raspberry flavour.

The step that matters

Add the juices only when the syrup is cold. Raspberry and lemon flavours are delicate and can dull with prolonged heat, so adding them to a cooled syrup keeps the fruit taste bright.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, sugar, raspberry):

  1. Vanillafits better
  2. Peachfits better
  3. Strawberryfits better
  4. Lemonthe original

Fit is the average pairing score against gelatin, sugar, raspberry. Candidates are from the same food group and used in at least 100 recipes.
