Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Separate the egg whites and add salt and cream of tartar.

Make the batter

  1. Beat the egg whites until very stiff.

  2. Gradually add the sugar and flavorings, beating thoroughly.

  3. Carefully fold in the sifted flour.

Bake and cool

  1. Pour the batter into an ungreased pan and bake for 40 to 50 minutes.

  2. Invert the pan to cool the cake when done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that gives the cake its light, airy structure.
Sugar
Sweetens the cake and stabilizes the whipped egg white foam.
Flour
Provides the structure that holds the cake's airy crumb once baked.
Cream of tartar
Stabilizes the egg white foam so it holds its volume while beating.

The step that matters

Carefully fold in the sifted flour. Folding gently preserves the air whipped into the egg whites. Stirring or deflating the foam makes the batter dense and the cake less light once baked.
