Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard base, while whites are folded in for a light, airy texture.
Milk
Forms the creamy body of the custard base.
Sugar
Sweetens the custard and helps stabilise the beaten egg yolks.
Gelatin
Sets the mixture so it holds its shape when chilled and turned out.
Lemon juice
Adds a touch of acidity that brightens the sweet, rich custard.

The step that matters

Stirring in the beaten egg whites. The whites must be folded in rapidly off the heat so they stay aerated and do not cook into lumps or deflate, which would leave the dessert dense and uneven.
