Cucumber Pickles

Ingredients

Directions

  1. Layer cucumbers in a jar, sprinkling coarse sea salt between each layer.

  2. Cover the cucumbers with scalding water and let it cool.

  3. Once cooled, bring the water to a scalding point again and pour it over the cucumbers.

  4. Repeat the scalding process three times, allowing the water to cool each time before pouring it off.

  5. Prepare a weak vinegar by heating it to a scalding point and letting it cool; repeat this process six times.

  6. Spice the good vinegar, scald it, and pour it over the pickles.

  7. Once cooled, the pickles are ready to use.
