Why it works: Vinegar and fennel work together. They rank in the top 19% of all ingredient pairs, and cooks put them together in 505 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
To Pickle Sturgeon

Directions
Prepare the fish
Split the sturgeon through the backbone and cut off the gristle.
Scrape the skin well, then wash the skin.
Salt the skin and let it sit for 24 hours.

Roll the sturgeon and tie it with twine.
Cook and pickle
Place the sturgeon in a large pot of cold water and boil until a straw can easily pierce the skin.
Remove the sturgeon from the pot and pull off the large scales.
Let the sturgeon cool.
Cover the sturgeon with 1 part vinegar and 2 parts salt and water.
Seal the pot tightly.
Serve
Serve garnished with green fennel.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sturgeon
- Is the main protein; its firm flesh and skin hold together through salting and boiling.
- Coarse sea salt
- Draws moisture out of the skin and firms the flesh before it is cooked and pickled.
- Vinegar
- Adds acidity that preserves the fish and gives the pickled flavour.
The step that matters
Boil until a straw can easily pierce the skin. Boiling must go far enough to cook the fish through and soften the skin for a tender texture, but overcooking can make the flesh fall apart. A straw test checks the skin's softness directly.
