Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Wash the salt from the butter and rub it until soft like cream.

  2. Add the powdered sugar, flour, and beaten eggs alternately to the butter, continuing to beat until light.

  3. Mix in the grated lemon peel, nutmeg, and brandy.

Bake

  1. Butter the pans and pour in the batter.

  2. Bake in a preheated oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air and give a tender, rich crumb.
Eggs
Add structure and richness, and help the batter rise and set when baked.
All-purpose flour
Provides the structure that holds the cake together as it bakes.
Powdered sugar
Sweetens the cake and adds to its fine, tender texture when beaten with butter.
Brandy
Adds aroma and flavour to the batter.

The step that matters

Adding the eggs and flour alternately while beating. Adding the eggs gradually lets the butter and sugar emulsify and hold air. Adding them all at once can curdle the batter, and the cake may bake up heavy and coarse.
