Ingredients

Directions

The book says “a moderate oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the asparagus

  1. Boil the asparagus pieces until tender, then drain and dry them.

  2. In a saucepan, combine the asparagus with the drawn butter and bring to a boil.

  3. Season with salt and pepper.

Bake and serve

  1. Pour the mixture into a buttered baking dish.

  2. Carefully break the eggs over the top, adding a small piece of butter on each egg, and sprinkle with salt and pepper.

  3. Bake in a 400°F (200°C) oven until the eggs are set.

  4. If desired, place toast under the asparagus before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Asparagus
Forms the bulk of the dish and gives a tender, vegetable texture once boiled.
Eggs
Set in the oven to bind the dish into a firm, sliceable custard-like topping.
Drawn butter
Adds richness and moisture, coating the asparagus and carrying seasoning through the dish.

The step that matters

Bake until the eggs are set. Eggs set when their proteins coagulate under heat. Pulling the dish too early leaves runny whites and yolks, while overbaking makes the eggs rubbery and dry.

Swap the asparagus

How well each one fits the dish's main ingredients (butter, pepper, egg):

  1. Capsicumfits about as well
  2. Asparagusthe original
  3. Chivefits about as well
  4. Potatofits about as well

Fit is the average pairing score against butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
