What each ingredient does

Golden pippin apples
Provide the pulp that gives the jelly its body and apple flavour.
Sugar
Sweetens the jelly and, as it cooks thicker, helps it set firm.
Lemon juice
Adds acidity that brightens the flavour and supports setting.
Blanched almonds
Add a crisp, nutty contrast to the soft jelly.

The step that matters

Boiling the syrup to the drop stage. The mixture must be cooked until thick enough to drop heavily from a spoon. Too little cooking leaves the jelly runny and unable to hold its shape once cooled, because the sugar and apple pectin have not concentrated enough to gel.

  4. Lemonthe original

Fit is the average pairing score against apple, sugar, almond, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
