What each ingredient does

Veal
Provides the main meat; thin pieces cook quickly and stay tender when fried.
Flour
Coats the veal and later thickens the pan juices into a light sauce.
Oysters
Add a briny, savoury flavour and soft texture as they cook through.
Lard
Fat for frying that browns the veal and carries flavour through the pan.

The step that matters

Cook until both are done. Oysters overcook quickly and turn rubbery, while veal needs enough heat to be fully cooked. Adding the oysters after the veal is nearly done helps both finish together.
