Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Peel and boil the potatoes until tender.

  2. Drain and mash them in the kettle until smooth.

Make the mash

  1. Add milk or cream, butter, and salt.

  2. Beat with a large spoon until well combined.

  3. Transfer to a dish and smooth the top.

Finish and bake

  1. Place a lump of butter in the center.

  2. Sprinkle with pepper.

  3. If using eggs, mix them in thoroughly.

  4. Transfer to a baking dish.

  5. Dip a knife in milk and use it to smooth the top, wetting every part with milk.

  6. Bake in a preheated oven at 400°F (200°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk and starchy body that gives the mash its structure.
Milk or cream
Adds moisture and softness, loosening the potatoes into a smooth texture.
Butter
Adds fat for richness and flavor and helps the mash feel silky.
Eggs
Bind the mash and set when baked, helping it hold its shape.

The step that matters

Beat until just well combined. Overbeating cooked potatoes ruptures their starch cells and releases sticky starch, which makes the mash gluey rather than fluffy. Mash and beat only until smooth and combined.

Swap the potato

How well each one fits the dish's main ingredients (milk, butter, pepper, egg):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against milk, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
