What each ingredient does

Oatmeal
Its starch swells and thickens with heat and water, forming the porridge body.
Boiling water
Hydrates the oats and provides the liquid that gelatinizes the starch into a creamy texture.

The step that matters

Cook on the stove, stirring occasionally. Oat starch thickens quickly and can stick and scorch on the hot pan bottom. Regular stirring keeps heat even, prevents lumps, and keeps the porridge smooth.
