Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Prepare a rich short cake crust using cream if possible.

  3. Fill a baking dish halfway with the prepared peaches.

  4. Add 2 quarts of sugar to the peaches and mix well.

Bake and serve

  1. Cover the dish and bake for 1 hour or until the peaches are dark red.

  2. Cool the cobbler and serve with sugar and cream.

What each ingredient does

Peaches
Provide the fruit filling, moisture and most of the flavour.
Sugar
Adds sweetness and mixes with the peach juices to form a syrup.
Rich short cake crust
Forms the topping; its fat, especially from cream, gives a tender texture.
