What each ingredient does

Brussels sprouts
Are the main vegetable, so their texture and flavour define the dish.
Bechamel or hollandaise sauce
Adds richness and moisture to the cooked sprouts for serving.

The step that matters

Cooking until tender. Sprouts cooked too briefly stay firm and bitter-tasting, while overcooking releases sulfur compounds that taste strong and smell unpleasant. Checking for tenderness, since age changes cooking time, gives the best texture.
