Ingredients

Directions

Prepare the potato mixture

  1. Peel and boil the potatoes in a kettle.

  2. In a pan, combine flour, sugar, and salt.

  3. Slowly pour in boiling water while stirring to avoid lumps.

  4. Mash the boiled potatoes and add them to the pan mixture.

  5. Pour in cold water and more boiling water, then let it cool to milky warm.

Make the yeast dough

  1. Stir in the dissolved yeast and keep warm until foamy.

  2. For each loaf, take 1 pint of the yeast mixture and pour it into a hole in a pan of flour.

  3. Stir until thick, cover, and let rise in a warm place for about 2 hours.

Shape and bake

  1. Shape into loaves, let rise again, and bake for 30 to 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Mashed into the mixture, they add moisture and a soft, tender crumb.
Flour
Forms the structure of the dough once stirred in and thickened.
Sugar
Feeds the yeast so the dough foams and rises.
Yeast
Produces gas as it ferments, making the dough rise.

The step that matters

Let the mixture cool to milky warm before adding the yeast. Yeast is killed by very hot liquid, while cool liquid slows its activity. Milky warm water lets the yeast wake and foam without being destroyed.

Swap the potato

How well each one fits the dish's main ingredients (flour, sugar):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
