What each ingredient does

Sweet potatoes
Provide the main body and sweetness of the dish.
Butter or sweet dripping
Conducts heat for frying and adds fat for browning and rich flavour.

The step that matters

Parboil the sweet potatoes before frying. Parboiling softens the starches so the slices cook through in the pan. Frying directly from raw risks a browned outside with a firm, undercooked centre.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (sweet potato, butter):

  1. Okrafits better
  2. Chivefits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against sweet potato, butter. Candidates are from the same food group and used in at least 100 recipes.
