Ingredients

Directions

Cook the beets

  1. Wash the beets without cutting them.

  2. Boil the beets until tender, about two hours for full-grown beets.

  3. Rub off the skins and slice the beets into rounds or split if they are young.

Dress and serve

  1. Butter the beets well in the dish and season with salt and pepper to taste.

  2. For a nice variation, mix 1 tablespoon of melted butter with 4 to 5 tablespoons of vinegar, salt and pepper, heat to boiling, and pour over the sliced beets.

What each ingredient does

Beets
Provide the main body and earthy sweetness of the dish, cooked until tender by boiling.
Butter
Adds richness and moisture, coating the beets and carrying the seasoning.
Vinegar
Adds acidity in the variation, sharpening the sweetness of the beets.

The step that matters

Boil the beets until tender without cutting them. Leaving the beets whole and unpeeled keeps their color and juices inside during boiling. Cutting them first lets color and sugar leach into the water, and the beets can turn pale and dry.
