What each ingredient does

Grapes
Provide the main fruit body and flavour, breaking down into the preserve as they cook.
Sugar
Sweetens the preserve and helps it set and keep by drawing water out of the fruit.

The step that matters

Stirring constantly while boiling. Sugar and fruit thicken into a dense mixture that scorches easily on the bottom of the pan. Constant stirring spreads heat evenly and prevents burning, which would give a bitter, dark taste.
