Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Helps form a foam that gathers and lifts impurities (scum) from the boiling sugar syrup.
Sugar
Forms the sweet syrup that boils down and sets into the candy mass.
Orange flower petals
Add the orange flower aroma that flavours the candy.

The step that matters

Removing the scum before boiling the syrup thick. Scum left in the syrup can cloud the candy and leave impurities in it. Letting the mixture settle and skimming it off first gives a clearer, cleaner result before the syrup is boiled down.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (egg, sugar, orange, coconut, almond):

  1. Vanillafits better
  2. Figfits about as well
  3. Cherryfits about as well
  4. Lemonthe original

Fit is the average pairing score against egg, sugar, orange, coconut, almond. Candidates are from the same food group and used in at least 100 recipes.
