Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat your oven to 300°F (150°C).

  2. Rub the lard, sugar, ginger, and mixed spice into the flour until well combined.

  3. Make a well in the center and pour in the syrup, then mix until a dough forms.

  4. Roll out the dough on a lightly dusted surface with ground rice to prevent sticking.

  5. Cut out shapes about the size and thickness of a penny.

  6. Place the cutouts on well-greased baking sheets, leaving half an inch between them.

  7. Brush the tops with water and bake in the preheated oven.
