Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries or strawberry jam
Provide the main strawberry flavor and fruit body of the ice.
Lemon juice
Adds acidity that brightens the strawberry flavor and balances sweetness.
Clarified syrup
Sweetens the ice and lowers its freezing point so it stays softer.

The step that matters

Turn and scrape until smooth and firm. Frequent turning and scraping break up ice crystals as they form. Stopping early leaves a coarse, icy texture instead of a smooth one.

Swap the strawberry

The recipe marks strawberry as optional. How well each one fits the dish's main ingredients (strawberry jam, lemon, syrup):

  1. Raspberryfits better
  2. Orangefits about as well
  3. Vanillafits about as well
  4. Strawberrythe original

Fit is the average pairing score against strawberry jam, lemon, syrup. Candidates are from the same food group and used in at least 100 recipes.
