Potato Biscuits

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Separate the yolks and whites of the eggs into two pans.

  2. Beat the yolks with the sugar until whitish.

  3. Dry and pound the lemon peel, then mix it with the yolks and sugar.

  4. Whip the egg whites until stiff.

  5. Fold them into the yolk mixture.

  6. Sift the potato flour over the egg mixture and gently combine.

Shape and bake

  1. Prepare paper cases on a baking tray.

  2. Fill them without overfilling.

  3. Glaze the tops with coarse sugar.

  4. Bake in a moderate oven (350°F / 175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the biscuits their light, airy structure, while yolks add richness.
Sugar
Sweetens the batter and, beaten with the yolks, helps create a pale, smooth base.
Potato flour
Supplies the starch that sets the batter into a tender, delicate crumb.
Lemon peel
Adds aromatic citrus oil that flavours the batter.

The step that matters

Whip the egg whites until stiff, then fold gently. Stiff whites hold air that makes the biscuits light. Overmixing or deflating them during folding releases that air, leaving dense biscuits.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, lemon, flour):

  1. Arrowrootfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, lemon, flour. Candidates are from the same food group and used in at least 100 recipes.
